Cinnamon is the bark inside the Ceylon cinnamon (Cinnamomum verum), a tree species belonging to the Lauraceae family and a native of Sri Lanka. Cinnamon is known since antiquity, and was used by ancient Egyptians in the process of embalming. The Bible, Herodotus and other classic authors make reference to it.

The tree is grown all over the world, but the highest quality is produced in Sri Lanka. Cinnamon is mainly used as a condiment in the kitchen and aromatic substance, but it is also widely used by the pharmaceutical industry. The essential oil of cinnamon is composed of 65-90% Cinnamic aldehyde, 4 to 12% of phenols (especially eugenol) and the following compounds: camphor, beta-caryophyllène, benzaldehyde, cuminaldéhyde, cinéol, phellandrène, etc.. It stimulates digestion and breathing, is antiseptic (active against the bacillus typhoid), antispasmodic, deworming, it is stated in sluggishness and gastro-intestinal spasms, asthenia influenza.

Some studies show that cinnamon is effective in helping diabetics stabilize their blood sugar, it is also rich in antioxidants and may play a role in the metabolism of sugars and fats.
Two recent studies have shown that cinnamon could have anti-hypertension virtues and could slow gastric emptying. An extensive review of scientific literature has classified cinnamon ranked fourth among the 50 foods containing the most antioxidants.

According to a vast American databank , cinnamon is the food which contains most of proanthocyanidins. The proanthocyanidins have shown some antioxidant properties in humans, for example by protecting blood and blood lipids against oxidative stress. Cinnamon is very rich in Cinnamaldéhyde: this volatile compound has a phenolic antioxidant power, has the ability to reduce the activity of the 5-lipoxygenase, an enzyme associated with the appearance of inflammatory or allergic reactions (such as asthma, rhinitis allergic, psoriasis). The cinnamaldehyde compounds provides cinnamon antimicrobial properties. Indeed, for ages, spices such as cinnamon are used to extend the conservation of foods. Studies on extracts of cinnamon today show that it can help reduce the multiplication of several micro-organisms.

Several studies in vitro and in animals indicate that cinnamon contains compounds the properties related to insulin potentially beneficial in the fight against diabetes. Among people with type 2 diabetes, the daily consumption of 1 g to 6 grams of cinnamon resulted in a significant reduction of blood sugar and certain blood lipids (total cholesterol, triglycerides, LDL cholesterol). Cinnamon appears as a promising food for diabetes control.
